Each Beyond Volume is supposed to (subtly) correspond to the original seven Harry Potter books. So far, we've seen this primarily through TLSQs. I get the feeling that, as time goes on, we'll see more and more integrations with the events of the books without directly influencing or changing anything. It would be impossible for them not to, especially by the time we get to Half-Blood Prince (V6) or Deathly Hallows (V7).
outside of the choco frogs event its pretty rare to get the last ones you need to complete your collection, unless the one missing is the signed one, given to you, by the school headmaster for completing one of his quests (there's no other way to get this one).
Sure, but I would very much like, and I think many others would too, to see some significant interaction with the Harry Potter plot.
Prophecies are sequences that you unlock by progressing through story mode and some TLSQs, they are not unlocked like normal memories through coins or gems.

yeah, but I just started year 5 and I didn't unlock/do any so far. All tlsq+adventures until end of year 4 are all completed as well.
I'm sure we will eventually, when we get to more significant story beats from the main books (Voldemort returning in Goblet of Fire, Dumbledore's death in Half-Blood Prince, etc.) Right now, the biggest plot events that would've coincided with the books are Harry starting his first year at Hogwarts, his encounter with Voldemort under Quirrel's control, and the opening of the Chamber of Secrets. Since V2 isn't over yet, Harry hasn't fought the Basilisk or destroyed Tom Riddle's Diary yet.
Exactly, that's why there will surely be some interaction of that caliber in the next volumes, even if it's minimal or not at all, it would be great.
I'm guessing there must be some specific glitch, because one of the prophecies, I think, was "First Date", which can be completed in Year 4, and once you complete it, it disappears. In Year 6, you unlock the "Underwater People" prophecy (I think it was like that lol), but before that, you'll also unlock others in the TLSQs. You don't need to be in Year 7 to unlock them. There must be some glitch.

Beauxbatons? I had no idea there was a prophecy in that tlsq, so before they deactivated that mission, that prophecy was there?
