Rather than unlimited gold, a way to reset quest or shop would be nice as you have to wait hours to get any more.

No worries. I believe there are 3 different ways to play the game (those who have played it, please correct me if I'm wrong.)
1. First is a story based missions where you are tasked to go from place to place to achieve the tasks needed
2. Next are side missions that you can take when going to a bar and accept those missions to earn money, and/or items. These, I think, are what DawnofWolfy meant when he mentioned reset quests (maybe) as those tend to take a bit of time, maybe 24 hours, before they reset those side missions again.
3. Last one is I think a PVP arena where you are matched with another player (I havent played this part yet so I have no idea how it goes)

Hope this helps! If you have managed to create a modded version of it with just the coins and crystals, I am fine with that as well, as those can be used to upgrade the ship! Thank you in advance!
